I looked at the video...the guy sweeping the knife around like a sword isn't go to kill any one, he's just going to cut them a lot but superficially. And when something on the seven most lethal places to kill a person starts with the base of the skull that tells me one thing...they've never actually stabbed or cut a living, moving creature with a knife. Two points; first, skin is tougher than you think. Remember it's what leather is made from. Second; you are not going to push a knife through bone using only the strength of your arms. Period.
I killed pigs (while they were on the ground with my knee on their head) by pushing the blade of my knife between the neck and where the collar bone would be on a person, with the sharp in towards the center of the body. I often had to hit the pommel with my other hand the get the blade through the skin. Once in, I would move the knife medially until it hit the ascending aorta; the pig would die in less than a minute.
The technique I told you above with paring knife is what they teach to military special forces.
Another way, which criminals use, is a bunch of quick stabs from behind just one side of the spine. The aim here is to hit a kidney or, if you're lucky, the renal artery. This is the "prison shiv" technique.
